Pumpkin Whoopie Pies - Gluten Free


These holiday spiced pumpkin whoopie pies are a little lighter than the originals. These cakelike cookies are made with pumpkin puree so we don't need to use as much oil in the recipe to keep them moist. The cream cheese icing is made with light cream cheese to further lighten them up. Since the cookie batter is made with Bisquick it's easily accessible whether you're following a gluten free diet or not. This fun dessert is sure to be a welcomed change from that same old pumpkin pie at your next gathering.
